Christmas Recipe: Spritz Cookies

I started doing some Christmas baking today and thought I would share a recipe I make every year, Classic Spritz Cookies. I like making them because 1) they're easy, and 2) one recipe makes 7-8 dozen cookies! 

I've had this recipe for four years but I can't remember where I got it from. It might be from Wilton but i'm not 100% sure. 

Classic Spritz Cookies
3 1/2 cups all purpose flour
1 tsp baking powder
1 1/2 cups butter softened
1 cup granulated sugar
1 egg
2 tbsp clear vanilla extract (I didn't have any clear today so I used the regular vanilla extract)
1 tsp clear almond extract
*You will also need a Cookie Press.*

Preheat oven to 350 degrees.
Cooking Time - 10-12 minutes. (depending on your oven, in mine they only take 9 minutes)

In a bowl comine flour and baking powder.
In a separate bowl beat butter and sugar with a mixer until light and fluffy.
Add egg, milk, vanilla, and almond extract; mix well.
Gradually add flour mixture to the butter mixture. Beat until thoroughly combined.

 Fill cookie press and press onto an ungreased cookie sheet.

 Different shaped discs you can chose from! Today I used the snow flake, Christmas tree and Christmas ornament shapes.

Ready to go into the oven!

 Decorate your cookies as much or as little as you want!

Coconut Spritz Cookies
1 1/2 cups (3 sticks) butter softened
1 cup granulated sugar
1 egg
3/4 cup shredded coconut
1 tsp pure vanilla extract
3 1/4 cups flour

Makes 6-7 dozen cookies
Preheat oven to 375 degrees
  1. In a large bowl cream butter and sugar together until light and fluffy
  2. Mix in egg, coconut and vanilla.
  3. In a separate bowl combine flour and baking powder and add slowly into butter mixture.
  4. Place in cookie press and press unto an ungreased cookie sheet.
  5. Decorate and you wish with sprinkles.
  6. Bake 10-12 minutes until lightly browned.
